Being that those are 250rpm graduations on the tacho, that looks fine to me, the idle can be adjusted a little with VAG-com- see here, but reading that suggests optimum idle is about 900rpm, yours looks to be around this so I wouldn't worry about it- my tacho needle is in exactly the same place at idle!

Initial start from cold will give a higher reading 903 RPM iirc once up to normal 90deg will drop back to 860 RPM
A faulty coolant temperature sensor can cause this, also shows a fault in Vagcom/VCDS lite.
2009 Kia Sedona GS In Black 2.9CRDI 183PS. 5 Speed Manual WAV.
2003 MK2 Galaxy Ghia In Solid Black 1.9 TDI 115PS. 5 Speed Automatic.

Upgraded Eberspächer booster heater  to independent heating with 7 day timer.

With VCDS lite (full version) need a code clearing or want to scan for faults in the north kent area, PM me.
All for a pint of Strongbow.

Base idle speed varies from engine to engine really, in the case of the Galaxy, an old databook I have suggests the petrol V6 idle is lower (about 700rpm) but the 2.3 petrol and TDI are similar at about 900rpm.

And just guessing but would the faulty coolant temperature sensor make the temperature needle drop and rise randomly too?

There are four pin versions depending on model but the grey one seems to be the usual one for early MK2's
